Fresh Salsa in February

It's been while since I have posted a food blog. This is mostly because I am not usually inspired by what I have to make. But, this afternoon, my tech guy requested that I make some homemade salsa. We are both in agreement that it tastes so much better than anything available in the grocery store. My recipe makes one adorable glass pint container for now and one to freeze for later. I'll be nice and share my recipe for those that would also like a taste of summer in the middle of February.

 

 28 oz can Whole peeled tomatoes (partially drain the juice so the salsa isn't too runny)

1 Small to medium white onion cut into large chunks

5 to 6 Garlic cloves peeled

1/4 cup Fresh Cilantro (no need to chop)

4 oz can Chopped (mild or medium) green peppers (I usually only use half of the can)

1 Lime

Salt to taste 

Place everything in a food processor and pulse on high until desired consistency.

Makes 2 pint size servings and lasts for over a week in the refrigerator.
